Mini pita pizza with daiya cheese and sundried tomatoes~ #vegan #daiya #pizza (Taken with Instagram at athens, ga)
This morning I sauteed a bunch of veggies I had in the fridge and made a tofu scramble. I added spices, nutritional yeast and a little soy sauce. I had it on top of a piece of Ezikiel toast and put some Daiya Pepper Jack shreds on top. DELICIOUS!
I made this tonight and it came out so good! I’m calling it a “Pizzone” cause to me it is like a mix between pizza and a calzone =) Next time I’ll add more stuff inside. This was more of a test. I try to make my own dough, but I was lazy today and used Trader Joe’s whole wheat pizza dough. I used 1/3 of it to make this (and really less than that because Michael and Serena used more dough than me). I rolled it out thin. Then I added sauce, mozzarella Daiya cheese, and fresh tomato. The I tucked the sides in, and rolled it up like a burrito. I brushed the outside with a little sauce and olive oil, then sprinkled with poppy and sesame seeds, and a garlic n’ herb mix I have. Popped it in the oven and whaaalaaaah! I can’t wait to make it again with more stuff inside =D

This turned out so good and it was soooooo easy to make. All I did was line a baking dish with corn tortillas and start layering. I do layers instead of the traditional roll up way of making them because to me it’s easier =) I used Daiya vegan cheese (cheddar and mozzarella) green chillies, black beans, and enchilada sauce. I think it was 3 layers. I baked it at 425* for 20 minutes. All the cheese melted so nice. You can top it with vegan sour cream, avocado, lettuce, tomatoes, olives…what ever you like!

I’ve tried a couple different vegan hot dogs, but this one by far (to me) tastes the best! I had never even seen them until last night. In the picture it doesn’t look that great (kinda orange in color…lol), but it was DELICIOUS! I added a little daiya cheese, dijion and roasted peppers and onions!
I made mac and cheeze for lunch, but without anything like cashew cream to make it creamier. I liked it just like this and the Daiya cheeze melted all buy itself when I mixed it into the warm pasta. I added cheddar Daiya shreds, Homemade vegan parmesan and I threw in some cooked green peas! And I love the squiggly colorful pasta too =D Love, love, love it!
