Vegan Apple Crisp Muffins…

These are delicious! I got the recipe from the “Happy Herbivore" cookbook, but it’s also on her website. They’re only 124 calories and 0.4 grams of fat! Vegan of course =)  Here’s the recipe and a pic I took. Enjoy!

Apple Crisp Muffins


  •  cups whole wheat pastry flour
  • ½ cup rolled oats
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ cup raw sugar (I used ¼ cup of raw agave nectar instead)
  • ¼ cup brown sugar
  • 2 tsp cinnamon
  • ¼ tsp ground ginger
  • a dash of nutmeg
  • ¼ tsp salt
  • 1 cup unsweetened applesauce
  • 1 cup apple, diced
  • ¼ cup pure maple syrup


Preheat oven to 350 F. Grease muffin tin or spray paper liners to prevent sticking and set aside. In a large bowl, whisk flour, oats, baking soda, baking powder, salt and spices together until well combined. Add applesauce, sugars and maple, then stir until almost combined. add apples, stirring until just combined. Spoon into muffin cups 3/4 full. Sprinkle additional oats and brown sugar over top if desired. Bake 18-25 minutes, or until a toothpick inserted in the center comes out clean.

Quinoa and Apple Salad with Curry Dressing

This is one of my FAVORITES! I love making it. You can use any kind of apples you like in it and your favorite nuts. You really can’t make it wrong =) It’s healthy and delicious!!! Enjoy! 

Quinoa and Apple Salad with Curry Dressing


  • 1 cup Quinoa (I use organic red quinoa because I think it’s prettier than the white…lol)
  • 1 tsp Agave Nectar or Honey
  • 1 tbsp finely chopped green onion
  • 1-2 tsp curry powder (more or less to your own taste)
  • 2 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1/4 cup raisins or dried cranberries (Or a mix of the 2 is what I usually do. You can add more if you like…I usually do)
  • 1 fuji apple diced (or your favorite apple)
  • 1/4 cup raw slivered almonds (More if you like. I’ve also added pecans and it was delicious!)


Boil 2 cups water in a medium saucepan. Add quinoa, return to boil, stir, cover and reduce heat. Simmer until quinoa is tender but still chewy, about 15 minutes. Fluff quinoa with a fork and let cool. For the dressing, whisk together agave or honey, green onion, curry powder and lemon juice in a large bowl. Whisk in olive oil. Toss in raising/dried cranberries, apple and nuts. Pour dressing mixture over quinoa, raising/dried cranberries, apple and nuts. Mix well.
